The right meal

Tonight's meal needs to satisfy the hunger of 4 adults. Of these 4 adults one is a diabetic, one works as a ship fitter and should probably eat a lot more calories then he does, one of us is a long boarder and only likes meat. Than there is me. I have a gluten insensitivity (boy do I try to pretend I don't), GERD and have been told by the doctor; "you are on the verge of being a diabetic" and "you now should eat an anti-inflammatory diet". I've done a great job of ignoring all of this advice and running away for the last few months. My body really hurts, my family is starving and moody. It's up to me to figure this out. Well I'm taking it on since I understand how food works. GERD is the thorn in my side. GERD - I feel like I'm underwater looking up

I read once if you change everything at the same time then you are setting yourself up for failure. Diet books I've read and the few nutritionists I've seen all generally agree on this topic. So then why do I feel like I'm all consumed and drowning in information? I have to break this down so I'm not drowning all the time. I decided start simple and track what I eat.  Its hard for me to use the phone apps because of all the little nuances so I'm going to keep a simple paper journal. The format will be: I ate:     at this time and date: I was doing and felt: for example: Today I ate 2 fried eggs in a tblspn of olive oil and a slice of swiss cheese. I had 2 packs of ritz cream cheese crackers and 12 oz of coffee with 2 raw sugars and 2 tblspns of half and half. I took my time consuming it because I ate it while driving to work (1.5 hour drive through the back roads of the PNW with little to no traffic). I have heartburn. I know why too, it's eithe...

Just for today

It's stories in the news about "The Great Barrier Reef" dying that make me want to push harder to consume less, reduce my footprint and help the world more. Below I created a list of ideas that's I work on. I was motivated again by this article http://www.cnn.com/2017/04/10/asia/great-barrier-reef-coral-bleaching/  I found on CNN April 10 2017 shows shocking pictures of what the reef looked like February to April of 2016.  That's two months apart. I've read that if the ocean dies we die.
